  • Hey! Thank you for posting these, you inspired me :)

    My husband mentioned loving scones forever ago, but I had never made them before so it slipped my mind. Then I saw your post with the recipe. I saw it was from king Arthur Flour, (hell yeah employee owned companies) and decided to give it a try! It was simple!

    I do not have a scone pan, and I had trouble figuring out how to shape them lol. I tried my best. I can't seem to get a photo of them to upload, they just came out the oven

    Thanks so much for sharing and helping me enjoy making something new today

  • My local co-op is covered in rainbow flags and support signage, and I'm seeing more and more white men, young and old, cowboy boot wearing, steel toe or running shoes, even one with a supremacist tattoo on his arm, meat head looking fellas,

    asking about the raw milk that comes in there and when is it delivered as it is gone very fast.

    We had white men in there of course prior, but these guys I'm seeing more and more of, are .. different. They really want that raw mommy udder milk juice.

  • I look up Pain Perdu and found many versions made differently. Top of the results gives a recipe originating from Louisiana, which had a large population of french immigrants once apon a time, and the culture there remains heavily influenced by such.

    Perhaps the US people do "weird things" to recipes is because we are a country full of immigrants adapting each others recipes with ingredients found here over many generations.

    We are a melting pot, and thus there are not strict rules for American cuisine.

    I was put off until I read you added soy sauce, that explains the color. I totally could see box mac and cheese with soy sauce working as a flavor combo too. It makes sense. Good job making something from what you had!

  • Absolutely!

    This is why I love getting small roasting chicken for dinners. Roast chicken is cooked, cut and cleaned off the bone, dinner one done. Immediately then the, well, carcass, goes into a pot for stock. Theres so much goodness in there. That will be for dinner two the next day. Usually I'll make an otherwise vegan dish the next day, but with using the homemade stock.

    I did not know about the vinegar trick, I may have to try it. Do you think lemon juice could work too?

  • Right? Made about a little less than a quart of stock with just the wing tips.

    I'm trying hard right now to stretch what we have in the pantry. Just made sense to not waste!

  • I had a friend pretty into mysticism. She kept it at bay enough it was harmless. Then one day at her place, had a conversation with her 18 year old son. The first half of the conversation he said I need to teach my son jow to deal with a break up. He had just been dumped and clearly had feelings about it.

    The second half of this conversation with this young person, he spent trying to tell me why the earth was flat. He used a split screen tictok as his reference material. I was taken aback by this, he just graduated high school.. Another time not long after, he saw husband's car with a behemoth sticker on it. He was clearly distressed, and asked me why we would have that, didn't I know I will attract demons and negativite energy?

    This was two years ago or so. Im not friends with her anymore, last I heard he was going to get a mining job down south. I was amazed and baffled by the words coming out this young person's mouth.

    The new ones are different.

  • Its the fluffy you get from the chemical reaction.

    Maybe they do this for flavor, but I really just think it's because buttermilk has a reaction to make the pancakes fluffier.

    For this purpose the milk/lemon juice trick does what it need to without effecting the flavor negatively.

    Edit, forgot they post was about ranch sauce. I know nothing about ranch. Ill get off the Internet now.

    If you have access to regular milk and vinegar (or a lemon) you can add a tablespoon of vinegar or lemon juice to one cup of regular cows milk, let it sit for 5-10minutes and it's the same effect of buttermilk.

  • I was speaking to my husbands grandmother (92) recently when the discussion of cooking came up. She mentioned when she was young, they never had salads, they weren't really a thing. She mentioned most vegetables came in a can, and now salads were expected at meals.

    This women eats very little, and very healthy. I bet one reason why she's still sharp at 92. But it made me think of the culture around food we have in the sates over the last 50-60 years.

    We now have full generations of folks not taught how to cook from scratch. I was lucky, growing up on a small farm, my guardian did teach me the basics, igniting a love for cooking. That plus the early 2000's Food Network shows, I was able to self learn and now I feel invincible in the kitchen. Though I will say I still fuck up from time to time. I made zucchini bread, and definitely didn't add enough flour, and my bread is very hit or miss. Anyways,

    You can't teach your children what you don't know youself. So many folks out there don't know what to do with raw ingredients. I grow oregano, and it's just all over the yard this year. I tried giving some to my (60-ish) neighbor, and she said, "I dont know what to do with that".

    It's a fucking herb lady, put it in your stew.

    The commercialization of foods from the center isles really had damaged our, collective food knowledge. There are exceptions of folks, similar to me, but a vast number have no clue, nor is it a point in our (American) culture to make sure young folks know how to feed themselves with little ingredients. This road began its paving in the 50/60s with convenience cooking, and the loss of home gardens.

    And to add, as a well versed home cook, you absolutely can make super unhealthy foods from scratch as well. Learning to cook is healthier than fast food, but you can absolutely throw down some calorie dense foods in your own kitchen too. It's not a cure all for health.

  • Just want to note, just because a person gives up beef doesn't mean you have to have tofu. I really dislike tofu. Even the years I kept vegan I never had it except to try it a few times.

    There are tons of other options in the bean world for protein replacement. Otherwise love your point.

  • I reduced my beef intake significantly nearly three years ago. I cook it maybe twice a year for holidays. Beans are absolutely so versatile. Beef is terrible for the environment, and should be expensive.

    That being said, I was looking at the sales at my local grocery and they had those "Bubba Burgers" I think the brand is called, frozen beef burgers, on sale, for $16.99 with only 6 patties in the box. I was shocked. Glad I've already invested myself in learning the ways of the bean.

  • No I am the same as you when it comes to drinking.

    I guess I don't know how to explain it.

    Maybe, something simple, like over eating sweets at a party because I was buzzing. I only realized it after I stopped drinking, how much it really was the alcohol making the decisions for me, even if that decision is to make a joke or share a story, I'd otherwise not speak without alcohol.

    I hear you and I'm not advocating all people shouldn't drink anytime. Just personally, I didn't realize how much alcohol influenced my decision making until after I gave it up voluntarily, about a year or so into sobriety.

    Reaction times are slower for example, so to drink is really deciding to give up control of yourself for a time. Probably why it makes socializing easier.

    He's not an asshole, but boy did alcohol make every mental health matter he had worse. In turn, creating an asshole.
